gluten free pistachio and ginger slice.


Somehow things feel healthier when they are gluten free. This recipe I adapted from one by Zarbo.

ingredients:
1 cup slivered almonds
1/2 cup hazelnuts- chopped roughly
2 cups gluten free flour
1 cup ground almonds
3 (heaped) teaspoons ground ginger
300grams butter
1 1/2 cups brown sugar

icing:
125grams butter
200grams golden syrup
3 teaspoons ground ginger
3 cups icing sugar

garnish:
100grams lightly toasted pistachio nuts

method:
toast the slivered almonds and hazelnuts in the oven at 180ºc for about 10 minutes, until lightly toasted.

sift together the flour, baking powder and ginger.

in a separate cream butter and sugar. mix in the sifted dry ingredients and the (now cooled) nuts. pour into a lined tin, about 30x20cm. bake at 180ºc for 20 minutes, until cooked through. (it will rise quite high and then sink again)

for the icing melt butter and golden syrup any old way you like, i do mine in the microwave. stir in the ginger and sifted icing sugar. spread while the base is still warm and scatter with toasted pistachio nuts.

chop into nice thick wedges and enjoy!
